Is it possible for fibre optic cable with a probe assembly to detect temperature like a digital thermometer?

Also, would fibre optic technology increase accuracy over conventional metal core cable?

Any advice on temperature sensors would be much appreciated.

Yes, there is a group of temperature-measuring devices, known as radiation thermometers (or more frequently radiation pyrometers) which includes types in which the signal is transferred to the signal conditioning and display unit through a fibre optic cable. These are particularly suitable where access is very limited or the environment unsuitable for solid state components - amplifiers etc.

These instruments depend on the fact that all objects emit thermal radiation over a wide range of frequencies or wavelengths according to the Planck radiation law. By selecting the operating wavelength, the useable temperature range may vary from ambient temperatures up to very high temperatures.

One advantage of a fibre optic cable in this instance is that it does not require an interface to an electrical temperature sensor such as a thermocouple or a resistance thermometer. The working end of the cable is formed into a blackbody cavity, so that the thermal radiation transferred down the cable approximates Planck's law reasonably accurately.
